What was turning out to be a great recipe and my first entry on the blog to exhibit my cooking( messing skills) was a total failure? Hate distractions!
Well I just made this great Sweet potato, tofu and spinach patty with cheese and some spices. Alas! Things didn’t go well in the end. It really tastes fantastic even after the fiasco. It just doesn’t look good in the end.
Here’s how I did it right until I messed it up,
1 medium sweet potato
½ cup thawed cut spinach
½ cup crumbled tofu
1 tbsp fat free cheddar cheese
1 tsp garam masala powder
1 tsp cumin powder
Non stick cooking spray
1 slice of Fat free American cheese (The disastrous ingredient)
Pierce the sweet potato about 5-6 times with a fork and cook it in the microwave for about 10 minutes. Thaw the spinach and crumble the tofu. Once the S potato is cooked mash it and add all the ingradients except the American cheese.
Form into two large patties and cook in a skillet sprayed with non stick cooking spray. I have proof that it looks good and tastes even better.
Then once the first side is cooked, flip and lay 1/2 of the cheese slices on the patties and cover with a lid till the cheese melts
Then I get a phone call and I forget about the patty. Later I remember but the patty is no longer beautiful but take my word, it is super tasty!
I served it alongside a salad.
