Crap free day 2
Hello Bloggies, it is day 2 of the crap free week and it is definitely better today than it was yesterday, man the HDK yesterday left my sinuses sore today!
Anyways I started my day with a Breakfast smoothie , today’s blend:
It was a great one and for the first time I had a nice green color. The breakfast was to-go.
At about 11 am I had some planter’s peanuts!
Lunch was a simple shrimp and mushroom salad. This recipe is adapted from Rachel Ray’s magazine. I added mushroom to add some volume.
1 serving about 1 cup of shrimps and about 4 slices of Portobello mushrooms chopped ,pan fried in a skillet with EVOO.
For the dressing:
1 ½ tbsp Spicy brown mustard
2 tsp vinegar
1 tsp honey
1 shallot finely diced (I used about 1/8 cup finely chopped yellow onion)
S + P
1 tsp EVOO
Mix all the ingredients and toss the cooked shrimp and the mushrooms in this dressing. Reserve some dressing to toss with the spinach.
It was just okay, I think I need to work on the recipe a lil’ more, may be some lettuce would help rather than the spinach.
On my way home from the class, I had a handful of dates for some sweet surprise. It also held me up until dinner.
For dinner I had red lentil dal with plain yogurt.
