Bottomless pit

The exam period begins and with that my appetite slowly starts to increase. I don’t know whether it is the anxiety or the fact that I home full time and in easy access to food that makes me hungry all the time!

I began my day with some

Morning Coffee!

Followed by : Cheerios + milk and some Choco PB!( Sorry I took the picture after I had eaten almost all of it)

Now my refrigerator is showing very low levels of Veggie and fruits readings. This happened cuz, last week I decided to shop for groceries at Super target instead of my local walmart or Kroger. I found some amazing stuff there, but when it came to fresh veggies and fruits they were either too pricey or not there at all! I still managed to get my grocery bill to the usual amount that I normally shop for! I don’t want to shop impulsively during the week because I know myself really well, a trip to the grocery for pepper, zucchini and fruits will turn out to be another $80 gone! So lunch was inspired by this post here and whatever frozen veggies I had on hand. I made myself some Chicken Lo mein. It turned out to be so so good!

But just an hour after lunch, I was hungry again. What has happened to me, I wondered. I guess the exam stress is taking a lil toll on me! So I PBed up some Wasa crackers with coffee and almonds to fill me up for good! (The extra cracker was just for back up, I ate that later however)

This was followed by 10 mins of Yoga for lower body and 10 mins of Hip opener, felt so good!

I then ate the extra cracker with some hummus and a coffee again!

Dinner: This morning I saw Kath eating a lovely poached egg and then I had to make it for Dinner. Plus I had to use the resources that are available until I go for grocery shopping tomorrow!

This yummy salad was born thereafter. This was my first attempt at poaching eggs.

Salad layers:

Roasted potato+ carrot with EVOO, salt pepper and oregano

Sweet onion

Chopped walnuts

Spring mix greens

Poached egg with lots of pepper

YUMMM!!!

Off to immerse myself in my books. The fact that I’ll be done with final next Friday excites and scares me at the same time; I have so much to do!
