Beware..long post ahead!!

Sorry I have been missing in action for the past few days, a few things came up and needed some attention.Nothing major!!

Can you believe how fast 2010 is progressing, can’t believe it is July already! Ah, in four short months I’ll be in front of my prelim committee presenting my PhD qualifier exams Gulp…My mentor has a meeting with me this week and I needed to start taking things a bit seriously!

Enough of the boring stuff right…lets talk about the long weekend! Did you do anything fun!None for me, the husband returned back from Germany this weekend and he was jet lagged. Well he can be jet lagged traveling in the same time zone but that topic deserves a blog post to itself.

Remember the office party I mentioned about in the blog post I published eons ago, well I think most of y’all agreed with the idea of  a black bean and corn salad. Fresh fruits were already claimed, hence I had to go with the salad!

I made RR’s BB and corn salad. It was really good, many people asked me for the recipe.



Fun purchase of the week:

I went to Target this week and am I the only one to go there with the idea of buying just toilet paper but instead come out with a cartload of stuff! Oh well!

So I needed a Chef knife, what better than the one with the label of the chef herself. I got the GDL for Target Knife. Nice!


and Coconut Sorbet. I was excited to try this, but all this was coconut flavored sugar water. What a waste!!



Then it was time for some celebrationssmile_party The husbands’ birthday was last week and since he was off to Germany for about a week, we had to post pone the celebrations.

We kicked off the party by eating his favorite food at home while he was taking care of his jet lag.

I made him Malai kofta and honestly I don’t want to toot my own horns but this was splendid. It was the kind you get at Indian restaurants. I’ll be posting the recipe soon.


and then for desert I made Rasmalai. Oh my gosh, this was so so good too. I really don’t mean to be praising my own self but it was really that good!

Yeah I know this is my second post of the day, but you ought to understand that I am a new blogger and super excited about it. Anyways I thought I should start my recipe submission with something sweet. I owe the success of this recipe to my mom who is a naturally awesome cook. This dish is called Rasmalai.ooooh my mouth is already watering. My husband is a real fan of this dish and I love making this for family.Rasmalai is made from Rasgulla and saffron flavored milk.The sweet and delicious balls of Indian cottage cheese or paneer which are made from whole milk or cow milk are immersed in a sugary syrup and served as a sweet dish in India.However this dish is primarily native to the eastern parts of India.
The rasgullas can be made at home, but to keep things simple I get them from the store ready made.

1 can of rasgullas (Found in Indian grocery stores)
1 liter or approximately 1/2 quart of whole milk.
1/2 cup sugar
1/2 cup Mixed nuts
2 Tbsp Pistachios sliced
A pinch of saffron

Open the can of Rasgullas and squeeze them to remove the excess syrup and keep aside.
To prepare the flavored milk boil the whole milk and then simmer down for about 15 minute till starts to thicken slightly.We do not want it too thick.Soak some saffron in warm water for about 5 minutes and pour this liquid in the milk to get the magical yellow color. Add sugar and the nuts mix. Finally add the rasgullas and chill for about an hour and serve!!!
Try this recipe at home for your loved ones and you sure will not be dissappointed!!

For appetizers, we split the Bang Bang shrimp. The husband ate most of it 😉

This was how we celebrated the 4th of July long weekend. Hope all of y’all had a blast of a time with your loved ones!!!!

Q. I am curious to know do you try making Indian food at home. If yes, what is your favorite thing to make? If no, why?

Q. Have you taken a really long flight/ road trip? I think road trips are slightly better than air travel. When I visit my parents I travel for 22 hours. It can be really taxing on your body! I would like to hear about your long travels.

  1. I dont make indian food b/c my hubs does not like curry or beans and tells me he hates indian food. I need to change his mind though and make him somehting amazing!

  3. I feel you on the disappointing sorbets! I recently got a container of mango sorbet that tasted nothing like mango! I think we’re just going to have to figure out how to make our own 🙂

  4. Your homemade Indian food looks great! I make Indian inspired dishes at home all the time, its one of my favourite types of cuisine, but its not very authentic!

  5. I love Malai Kofta…I usually don’t order it because I know it is super rich but I do love just a bite or too. I wish I had your Indian cooking skills Priyanka! Your food looks delicious and authentic, unlike mine which is usually quite haphazard. 🙂

  7. Hello! Hope all is well with you 🙂 So sweet of you to have a weekend long celebration for the man. Your homemade dinner looks fabulous (of course) and I totally want to try that corn and bean salad. I haven’t made Indian at home! The amount of spices makes me too nervous to try it myself 😉 We did a lot of BBQing/hanging with friends this weekend- totally fabulous. oh and totally no biggie- Frank is an English bulldog 🙂 All those wrinkles do have a tendency to look the same 😉

    I do make Indian food at home- all I really know how to make well is channa masala, paalak paneer, and baingan bharta! And tamarind rice…mmm.
    I really want to try to “healthify” a malai kofta though!

  10. Did you know I’ve been craving Indian food like mad? I think this calls for a new cooking adventure…what do you think is easy enough, and doesn’t need to many new ingredients? I’d ideally love to start with paneer…;-)

  13. I hope your prep for your prelims is going well. I can remember getting ready for my thesis defense (stressful) and I’m sure it’s not even close to as stressful as what you are doing as a PhD candidate. I have total faith in you though. I’m sure you know what you are talking about and will show your passion and knowledge to your committee.

    I will one day start making more recipes at home, including Indian. I need a bigger kitchen with more room for unique flavors and ingredients. At this point, I don’t have that, but I will one day 🙂
