Nacho Veggies!

Hello ladies!! Is it September already and are we sliding down the week-hill !? Two expressions, Oh boy for the former and Yoohoo for the latter!! I really cannot wait for this long weekend! I need some R & R!

Thanks for all your support regarding my morning gym thing. It sure is working for me and I went to the gym on Monday, Tuesday and declared today a rest day!! I am going to begin updating my workout log page from now on!!

Moving on, I had a weird dinner craving tonight all I wanted was Nachos!!I made them and let me tell ya these are not just any Nachos..No..No..No! These are healthy, delicious and a filling version of the original! I bulked it up big time and was so happy with the final product! I am not a big fan of cheese, hence this nacho cheese was more like nacho veggies πŸ™‚

I was in a really hurry to snap this picture or else the entire thing would be gone! That explains why I snapped it while it still rested in the cookie sheet and quite honestly we did not even bother to get it out in a separate dish πŸ˜‰

Ingredients:
2 cups tortilla chips, I used Blue corn baked chips!
1/2 cup Organic mild cheddar cheese
2 Veggie burgers, cut into small bits
2 scallions chopped
1 green pepper chopped small
1 Roma tomato diced
a handful of cilantro chopped
1/3 cup salsa of your choice. I used TJs Peach salsa!
Jalapeno optional.(I did not add it, since the Husby cannot stomach hot and spicy!)

Directions:
Preheat oven to 350 F.
Spread the chips on to a cookie sheet and sprinkle the cheese.
Once the cheese melts, remove and spread the veggie burger bits on the chips and let it heat through for a minute or so.
Next add all the tomatoes, peppers and half of the scallions. let it bake for 1 minute.
Garnish with the remaining scallions, cilantro and place a big blob of salsa.

I used the peach salsa and the sweet and salty combination was absolutely amazing!
Next time I’ll add Guacamole as well!

This recipe got a major Thumbs up from the husby! He has asked me to make it again tomorrow..Works for me!!

I am going to go study now, okay πŸ™‚

Q. Your first car, current car and dream car? My first car was a Indian auto-brand called Maruti Zen!! In the US my first and current car is a Toyota corolla!!My dream car would be a Mercedes SUV. It is my dream to own a Mercedes and SUV is such a stylish make. I love it when girls ride a SUV!!

  1. I remember Maruti’s! And Ambassador’s. Oh I miss India all of a sudden.

    My favorite car is a Range Rover! I had one and I loved it but I felt terrible ruining the environment so when my lease was up I gave it back. And now I don’t care what I drive because I can’t have my dream car back. πŸ™‚ I have a nice, sensible Audi, i.e. a “Mom” car.

  3. YUM! Great looking nachos. I actually made nachos last week with blue corn tortilla chips, refried beans, cheddar cheese, tomatoes, spinach, and salsa. Yum, they were fabulous.

    Glad the morning workout thing is working for you! I never thought I would enjoy working out in the morning, but now that I am into it I can’t stop. I will never go back to afternoon workouts.

    Current car; Honda Civiv, Dream car? This might sound strange, but I want a Subaru!!

  5. Way to go with your morning routine! It’s kind of amazing how much more energy you have for other people when you take care of your own needs – that’s one of the primary reasons why I love morning workouts. Once I get my own stuff out of the way, I just feel so much more receptive/responsive to others. The nachos look great and I also love the blue corn chips.
    Well, “Dream” car is the right question. My husband is 6’6″, so fitting him into most cars is a challenge…at best. We drive SUVs (first an Explorer and now an Escape) because he fits inside them and we need to haul our snowshoes, x-country skis, hiking and camping gear around most weekends. I would love a Volvo X-country station wagon, but it’s definitely an extravagance that I am willing to forego. And since we’re dreaming, mine would be a hybrid too!

  11. i love that nacho idea! totally doing it. my first car is the one i’m driving now, a scion xa. i love it! i’m not very into cars; my “dream” one would probably just be a prius, with a gps and hands free headset!
