Weekday lunches and summer retreat day 1

Hello, hello, hello!

I have made good use of most of my day today except an episode of headache which kept me away from my to-do list. I managed to strike off most of the items on the list. Menu planning, grocery shopping and making some make-ahead meals were top on the agenda.

Two lunches that I have now made in abundance include,

TUNA NICOISE SALAD SANDWICH from Everyday food

The layers:

  • Spicy olive tapenade
  • Arugula
  • Tuna dressed in EVOO, Lemon juice and mustard
  • Cukes and red onion dressed as above

Chorizo Mexican Burrito (Inspired by Andrea)
The chorizo I used was a Smart choice soy chorizo. I normally don’t buy soy product but a $1 coupon made me do it 🙂 I am sorry I forgot to take a picture of it.
And finally a big batch of Erica’s Coconut oatmeal bars that are absolutely delicious.

As part of the day 1 activity, we were asked to write down what our ideal day would look like and do one item from the ideal day today. Well, an after dinner walk with the husband was a part of my resolution this year and that is just what I did.

Workout: I have taken a big break from working out and I hope to get back to it from tomorrow.

Your favorite summer activity? When I was a kid, waking up in the morning to go skating and play badminton were my favorite summer activities!
