My very first Giveaway!

Ello Ladies!

Sorry for not posting last night! I was flat on bed by like 8pm last night. One of my friend had been admitted in the hospital after continuous high fever and on doing the blood work her platelets and WBC are way way down. She is totally debilitated and her husband has been doing all the work. So I thought I could help them by cooking for a day or two! I made some Roti’s, Chickpea curry and pinwheel sandwiches for the kids!

This morning’s brekkie:

whole wheat bread with PB spread on one and Strawberry jam on the other+ some smart balance!

Lunch:

Okra and eggplant curry+ brown rice with Iced Vanilla truffle tea

Dinner:

I made some Whole wheat Orzo and peas stew! It was lite and just something that I wanted!

• 4 oz dry orzo
• 1/4 cup spaghetti sauce
• 1/2 cup frozen peas
• 3 cups veggie stock
• oregano
• basil
• 1 clove garlic
• 1/2 large or 1 medium onion
• paprika

Heat a skillet, add EVOO followed by onions + garlic.

Then add the pasta and peas. Mix for about 2 minutes and then add the sauce

Then add the stock and let it come to a boil!

Once boils, simmer for about 10 minutes or boil down to the consistency you want!

Orzo topped with sprouts instead of Parmesan cheese, Iced tea and German chocolate for dessert!
